I don’t have an automation, but I do send texts as a one off. I try to keep it super casual and judgement free. Like, “Hey {name}! It’s Lynn! I’ve missed seeing you in the studio this week. I’ve got a few spots left in my (some class they normally take). Can I grab one for you?” I usually run a report on Fridays of clients who haven’t taken that week and use that as the jumping point to make it more personal if I know of specific trips, injuries, etc.

I’d go with the Manychat option. From THERE it could link to something that asks for an email. If you ask for an email on insta, my guess is most people wouldn’t be up for that. They’d rather get the info/offer first and then opt-in for more.
